Hibiscus Berry Iced Tea Slush

Ingredients

  • 800 ml chilled hibiscus tea
  • 300 ml berry juice (red berries)
  • 200 g mixed berries
  • 90 g sugar
  • 2 tbsp lemon juice

Preparation

  1. 1Finely purée the mixed berries and pass them through a sieve to remove the seeds.
  2. 2Stir the berry purée with the chilled hibiscus tea, berry juice, sugar and lemon juice until the sugar has dissolved.
  3. 3Pour the mixture into the machine and start the slush mode.
  4. 4Let it freeze to a fine slush consistency and pour into tall glasses.
  5. 5Garnish with fresh berries and a sprig of mint and serve chilled.
Tip

Cook the tapioca pearls separately and only add them to the glass when serving - they must not go through the machine. Let the hibiscus tea steep well for a deep red colour.
