Ingredients
approx. 1.4 LAdjust amount
- 800 ml chilled hibiscus tea
- 300 ml berry juice (red berries)
- 200 g mixed berries
- 90 g sugar
- 2 tbsp lemon juice
Preparation
- 1Finely purée the mixed berries and pass them through a sieve to remove the seeds.
- 2Stir the berry purée with the chilled hibiscus tea, berry juice, sugar and lemon juice until the sugar has dissolved.
- 3Pour the mixture into the machine and start the slush mode.
- 4Let it freeze to a fine slush consistency and pour into tall glasses.
- 5Garnish with fresh berries and a sprig of mint and serve chilled.
Tip
Cook the tapioca pearls separately and only add them to the glass when serving - they must not go through the machine. Let the hibiscus tea steep well for a deep red colour.
