Ingredients

- 100 g pure pistachio paste (Bronte)
- 850 ml water
- 130 g sugar
- 200 ml milk
- 1 pinch of salt
Preparation
- 1Dissolve the sugar and pinch of salt in the water, stirring until the liquid is clear.
- 2Whisk the pistachio paste with a little of the sugar liquid until smooth, then mix with the remaining liquid and the milk into an even base.
- 3Pour the mixture into the machine and start the slush mode; the coarse crystal texture of the granita is exactly what you want here.
- 4Fill into tumbler glasses so the typical crystalline texture stays visible, and garnish with chopped pistachios.
Tip
Whisk the pistachio paste with a little warm water until smooth before mixing it with the rest of the liquid - that way nothing clumps.
Variation
Serve with a dollop of whipped cream as a dessert granita.
