Ingredients

approx. 1.4 L

  • 800 ml strong espresso (cooled)
  • 120 g sugar
  • 400 ml water
  • 1 pinch of salt
  • Whipped cream for serving

Preparation

  1. 1Dissolve the sugar and pinch of salt in the water and stir in the cooled espresso.
  2. 2Pour the coffee mixture into the machine and start the slush mode.
  3. 3Let it freeze until a coarse, crystalline granita texture forms.
  4. 4Fill into tumbler glasses, crown with a dollop of whipped cream and garnish with a coffee bean.
Tip

Make sure the espresso is completely cooled before it goes into the machine. Traditionally served with a cap of unsweetened whipped cream.

Variation

For a breakfast twist, serve with a warm brioche.
