Ingredients
approx. 1.4 LAdjust amount
- 800 ml strong espresso (cooled)
- 120 g sugar
- 400 ml water
- 1 pinch of salt
- Whipped cream for serving
Preparation
- 1Dissolve the sugar and pinch of salt in the water and stir in the cooled espresso.
- 2Pour the coffee mixture into the machine and start the slush mode.
- 3Let it freeze until a coarse, crystalline granita texture forms.
- 4Fill into tumbler glasses, crown with a dollop of whipped cream and garnish with a coffee bean.
Tip
Make sure the espresso is completely cooled before it goes into the machine. Traditionally served with a cap of unsweetened whipped cream.
Variation
For a breakfast twist, serve with a warm brioche.
