Ingredients

  • 1000 ml fresh watermelon juice (strained, seedless)
  • 110 g sugar
  • 200 ml water
  • 1 splash of lemon juice

Preparation

  1. 1Stir the strained watermelon juice with the water and the splash of lemon juice.
  2. 2Add the sugar and stir until completely dissolved.
  3. 3Pour the mixture into the machine and start the slush mode so the coarse crystal texture typical of granita develops.
  4. 4Fill the granita into tall glasses, fluff it up briefly with a fork and garnish with a piece of melon.
Tip

Blend the watermelon and pass it through a sieve so no seeds get in the way. The splash of lemon keeps the colour fresh and rounds off the sweetness.

Variation

Sicilian tradition: add a hint of jasmine blossom aroma for a Gelo di Mellone.
