Ingredients

- 1 large bunch of fresh mint
- 750 ml water
- 110 g sugar
- 2 tbsp lime juice
Preparation
- 1Purée the fresh mint with part of the water until fine, let it steep briefly and press through a sieve.
- 2Add the remaining water, the sugar and the lime juice and stir until the sugar has dissolved.
- 3Pour the mixture into the machine and start the slush mode so the coarse crystalline texture typical of granita develops.
- 4Pour the granita into tall glasses, fluff briefly with a fork and garnish with a sprig of mint.
Tip
Only steep the mint briefly in the hot sugar syrup - that keeps the color a fresh light green.
Variation
Add a few lemon balm leaves for a citrus-fresh depth.
