Ingredients

  • 250 ml espresso, cooled
  • 450 ml tonic water
  • 110 g sugar
  • 30 ml sugar syrup
  • 1 tbsp lemon juice

Preparation

  1. 1Stir the cooled espresso with the sugar, sugar syrup and lemon juice until the sugar has dissolved.
  2. 2Gently stir in the tonic water so as little fizz as possible is lost.
  3. 3Pour the mixture into the machine and start the slush mode.
  4. 4Pour into glasses and serve.
Tip

Espresso and tonic are both bitter and mostly water, so you need the sugar and sugar syrup, otherwise it won't freeze. Stir in the tonic gently so you don't lose too much fizz.

Variation

Use an orange slice instead of lemon and a little orange juice for a fruitier version.
